Mint Mocha Matcha Energy Balls

INGREDIENTS
 
  • 2 cups pumpkin seeds
  • 1½ cups dates (medjool or honey)

  • ½ cup cacao or carob powder

  • ¼ cup white sesame seeds

  • ¼ cup honey or liquid sweetener

  • 2 teaspoons 10th Avenue Tea Mint Mocha Matcha

  • ¼ teaspoon sea salt

     

    COATING (optional)

  • 2 tablespoons cacao powder

 

PROCEDURE

In a food processor, mix the seeds, dates, and sesame seeds to form a crumbly mixture. Add in the remaining ingredients.  With the hands, roll about 1-inch balls and then roll in the cacao powder.  Serve immediately or refrigerate in an airtight container up to 2 weeks.  MAKES 18 TO 20 BALLS
